When you live on the road, meals need to be simple, versatile, and deeply nourishing. This chopped veggie mix has become one of my absolute favorite staples — I make a big batch, keep it in the fridge, and use it all week in multiple ways.
It’s colorful, hearty, full of crunch, and packed with nutrients that truly support and heal the body. I love that I can tailor it depending on what I have on hand, but this base recipe never fails me.
🥕 My Favorite Veggie Power Mix (Road-Friendly Recipe)
I chop everything really fine so it blends easily into whatever I’m making.
Ingredients:
6 carrots
5 stalks celery
1 large red onion
1 big cucumber
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 head broccoli
1 bunch fresh parsley
1 package cherry tomatoes
¼ head red cabbage
That’s it — simple, whole, vibrant food.
You can absolutely adjust quantities or swap veggies based on what you like or what’s in season. This mix is forgiving and flexible.
🥑 How I Use This Mix (So Many Ways)

🥗 Quick Fresh Salad
I scoop some into a bowl and add:
Avocado and/or feta cheese
Juice of 1 lime + 1 lemon
A pinch of salt
Fresh, filling, and ready in minutes.

Use it as a fresh dip with tortilla chips
Spoon it over tacos or wraps
🍳 Breakfast Scramble
I sauté a small amount and toss it into my scrambled eggs in the morning. It adds flavor, texture, and nutrients without feeling heavy.
